Breakfast Quesadilla & Creamy Roasted Red Pepper Hot Sauce
Ingredients
1 Tbsp. cooking oil
4 corn tortillas
2 Tbsp. cream cheese
1 Cup shredded cheese
4 eggs
2 Tbsp. Creamy Roasted Red Pepper Hot Sauce
Salt and pepper to taste
Directions
1. Heat a skillet to medium heat and then add in the cooking oil. While that oil is heating up crack 4 eggs in a bowl and scramble, then add into the pan.
2. While the eggs are cooking, smear cream cheese on one side of each tortilla. In another pan, lay the tortillas in the pan then add your shredded cheese and let that melt a little. Next, add your eggs onto the tortilla and cheese and cover.
3. Cook until tortillas are crispy, then cut into triangles. Pour the Creamy Roasted Red Pepper Hot Sauce into a small ramekin for dunking!
